Everyone who has visited River City Cafe, looked at our menu online, or stumbled across one of our social media pages knows that we take a great deal of pride in our burgers. From traditional burgers to our specialty burgers to the five-pound creations we call the Kitchen Sink and the “OMG,” our burgers are known for all of the flavor and happiness they provide to our guests. But we have a burger on our menu that is extra special.

Hamburgers don’t just fall off of a cow. The ground beef used to make hamburgers actually comes from several areas of the cow. It is partially dependent on the butcher, but ground beef is a combination of trimming cuts from steak, chucks, rounds, and roasts mixed with a specific fat content to reach the desired amount. The best fat ratio in meat is 20% depending on who you talk to. So when you buy “80/20” ground beef, it is 80% meat and 20% fat. The fat is what delivers the flavor that we get from a hamburger.

In contrast, portions of a cow are known as “primals,” where the quality is higher. For example, Chuck is typically the cheapest and most common, Choice is a medium-grade cut of meat, and Prime is the best cut of beef on the cow. Traditionally the Prime cuts of beef come from the rib and sirloin areas of the cow.

Prime rib is a cut of beef, specifically ribeye, that is well known to be rubbed with herbs and slow-cooked, but it is one of the best cuts of meat because of the propensity for fat marbling in the meat. When ground, prime rib becomes automatically tenderized, and there isn’t a need to add fat content to the mix. While prime rib is not typically used for burgers because of its value as a steak, the grinding process helps bring more flavor to the meat thanks to the higher-quality cut of beef.

At River City Cafe, we have taken notice of this process and the product that it yields. What kind of a burger joint would we be if we didn’t offer a top-of-the-line burger in addition to our other offerings. I mean, we do offer Turkey and Chicken burgers in addition to our other extremely popular options; it makes sense that we would provide the high-end flavors of a prime rib burger. We use the right cuts of meat to give us a decadent and tasty burger that is well balanced.

Our Prime Short Rib Burger features a huge half-pound burger lovingly made from a premium blend of chopped prime short rib on a pretzel bun. We serve this fantastic burger with your choice of cheese and choice of toppings: lettuce, tomato, onion, pickles, mustard, and mayo.
